Raspberry Caramel Turnovers ( I love Trader Joe's Cookbook )

These are great do- aheads for a Party, and you can keep them in the fridge for a few days before baking or freeze them and bake a few at a time when you need a sweet treat. Enjoy...

Raspberry Caramel Turnovers

1pkg. TJ's frozen Artisan Puff Pastry, thawed but kept cold
1 (17.5oz) jar TJ's Fresh Raspberry Preserve
5 Caramels from a 10oz container TJ's Dark Chocolate Covered Caramels, cut in half (you'll have half left for quality control)

Preheat oven to 400 degrees . Roll the pastry out a bit, and cut into nine 3-inch squares. Spread the pastry with about a teaspoon of raspberry preserves and half a caramel in the center. Fold the pastry, corner to corner, to form a triangle, and press the edges with a fork to seal. Chill 15 minutes in freezer. Bake until pastry is golden, 18 to 20 minutes. Cool Slightly before eating- the filling is very hot.

Prep Time :15 minutes
Cooking Time: 20 minutes
